Crabs (Lettuce Crustacea) are a class of arthropods, mostly sea and freshwater animals, only a few species live on land. There are different sizes, some are small, just microscopic visible (diameter about 0.1 mm) to huge.

Crabs are generally covered with a thick exoskeleton, composed primarily of highly mineralized chitin, and armed with a single pair of claws. Crabs are found in all of the world's oceans, while many crabs live in fresh water and on land, particularly in tropical regions.

The body of the crab is protected by a armor, which is hardened with calcium carbonate and phosphate, makes a strong outer skeleton. The armor does not grow with the crabs, the crabs thrown it away from time to time. Armor is also a variety of colors since crabs adapt well to the environment in which they live. The red color they get by cooking, crabs thanks to astaxanthin, a natural pigment that is contained in the armor. There are also crabs that do not have armor, but they use shells of snails, for example, cancer pagurian. Lobsters, especially the land, have great regeneration capacity of lost parts, there is only the possibility of mutilation, for example, for rejection if they are caught. Lobsters have a different life time, from several months to more than 50 years (red lobster).

Due to excessive exploitation for commercial purposes, the laws of the Republic of Croatia allow  the  hunting for a limited period of time exclusively for professional fishermen for certain types of crabs while other species are permanently protected.

Fishing closure for these species: slipper lobster 10.09.-15.05., spiny spider crab 01.06.-30.11., red lobster 10.09.-15.05., lobster 10.09.-15.05.

Crayfish can survive without water for up to 48 hours but only if they are not exposed to sun or high temperatures. Therefore, we must prepare the crabs for food as soon as possible ... best while they are still alive. Tasty and healthy food, full of proteins, minerals and B vitamins, and the most popular in gastronomy are red lobster, lobster, spiny spider crab, shrimp,scampi, spider crab, slipper lobster and recently more known blue crab.
